Oination Modern oedification with cold-hydrate for a few hours at 10°C before fermentation. One third of the must is placed in stainless steel tanks, another fraction in amphorae and the rest in large oak tanks (also known as "foudres") where fermentation takes place and is completed. The wine remains in contact with its thin lees for about 4 months of aging.
Taste Characteristics – Aging Wine with exuberant aromas of white flowers, citrus fruits and orange blossoms with intense intensity. It is characterized by its rich body in balance with its high acidity. It can be further aged for 3 to 5 years. Ideal combination of white meat food and cooked fish with acidic and spicy sauces.
